Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until the water is absorbed.
  2. Once cooked, fluff the quinoa with a fork and let it cool for a few minutes.
  3. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, and parsley.
  4. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper to create the vinaigrette.
  5. Pour the vinaigrette over the quinoa mixture and toss to combine.
  6. Serve immediately or chill in the refrigerator for later.

Chef's Notes

Feel free to add other vegetables like bell peppers or chickpeas. Feta cheese (vegan, if desired) also makes a great addition.
